Our Manifesto
There is a grove nested in the hills of Sabina, just outside Rome, that has been producing extra virgin olive oil since before Rome was Rome.
The Romans called it "aurum liquidum," liquid gold, and reserved it for those who could afford something so extraordinary.
Our Nonno bought it forty years ago. The family moved away, and nobody went back. That olive oil still found its way to our table every year, taken for granted the way only the best things are.
Until our grandmother died last summer, and something shifted. An invisible thread pulled us back.
We had been trying to sell the grove for years. Somehow that never worked out. Maybe the grove was waiting.
What we found when we returned was still there.
Ancient trees with silver leaves shimmering in the sunlight. An oil bold and peppery, bright green as spring grass, with the artichoke and tomato aroma of a land that has never been rushed.
We believe the table is where real relationships happen, where community and family gather, and that what you put on it matters.
We harvest early each autumn, when the fruit is young and the oil is at its most vibrant, rich in polyphenols and flavor at its boldest.
When it's gone, we wait for the following year. This is the nature of the land.
Sabacta is that grove, and everything it offers. A world built around a table where people stay a little longer than they planned.
